This quick, delicious, hearty bowl of oatmeal is sure to become your favorite fall/winter breakfast!
Peanut Butter Oatmeal is rich in flavor and has amazing texture. When combining quick cook steel cut oats with old fashioned rolled oats you get a great thick, creamy porridge. Add a number of toppings to make this recipe your own combination of deliciousness. I love mine topped with a quarter of a banana or a tablespoon of jelly!
This is a Single Serve Recipe or double it for additional family members. Only taking about 15 mins to make its super quick for busy mornings!
Your List of Ingredients
1/4 cup old fashioned rolled oats
2 T quick cook steel cut oats
2 T Peanut Flour
1 T Gentle Sweet
1-2 doonks pure stevia
2 pinches of salt
1/2 cup unsweetened almond milk
1 cup water
Step 1: Combine all ingredients in a small sauce pan
Step 2: Bring to a Boil
Step 3: Allow to simmer for ~3 mins
Step 4: Turn heat off and let sit for 10 mins
Step 5: Pour Into Bowl and top with any additional toppings
Some great topping ideas:
1 tsp PB;
1/4 banana;
1 T Sugar Free Jelly such as Polaner's;
2 TBSP Koach Kanada's Real Deal Peanut Butter
A garnishment of chopped nuts
To make this a Crossover increase your PB or nut toppings to 1 TBSP or add any other fat source you'd like!

To cook this in the microwave what would you suggest? I usually cook 1/2 c old fashioned oats with 1c water for 3 minutes. After I get back to it, I add various other ingredients. But with psyllium do you think I'll need more water or time? I'm assuming I should add it with the oats & water to cook...
